To bring out all these aromas, I recommend:

-A DH during primary fermentation for a "real IPA": with character, sharp bitterness, and a pronounced aroma. Minimum 5 g/L
-A DH during storage will greatly reduce astringency and resinousness.

This 2024 vintage is very strawberry-oriented. A rather difficult aroma to extract and preserve. It would be interesting to test it in cold DH on a NEIPA or Session.

*Hops are subject to the same diseases as vines. As a result, non-organic cultivation can lead to multiple treatments (using synthetic products in particular), which are detrimental to biodiversity in the soil and in the vicinity of hop fields. Organic farming preserves soil life, insects, birds, etc. - in short, biodiversity.

**Organic hop growing favors the use of compost and other fertilizers of natural origin. This results in a high concentration of carbon in the soil. Less CO2 in the air = less warming of the atmosphere.
