To compensate for its absence, I recommend:

Styrian Golding: Delicate and complex, it offers a bouquet of subtle aromas and a long finish.
The Saphir : Largely underrated, this hop increases drinkability with its slightly lemony touch.
Tettnanger: From the same lineage as SAAZ, it resembles it with a slightly peppery effect as a bonus.
The Spalter Select : The other sibling of SAAZ, it is the easiest to use because it is the most neutral. Its "herbaceous" finish is easily recognizable.
